Low Carb Spinach and Feta Quiche Cups

Ingredients
1 tablespoon olive oil
1 cup fresh spinach, chopped
4 large eggs
1/4 cup heavy cream
1/2 cup crumbled feta cheese
Salt and pepper to taste
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Directions
Preheat your oven to 350°F (175°C) and lightly grease a standard muffin tin.
Heat the olive oil in a skillet over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Set aside to cool slightly.
In a mixing bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder, and onion powder until well combined.
Stir in the sautéed spinach and crumbled feta cheese into the egg mixture.
Pour the mixture evenly into the prepared muffin tins, filling each about 3/4 full.
Bake in the preheated oven for 18-20 minutes, or until the quiche cups are set and golden brown on top.
Remove from the oven and let cool for a few minutes before carefully removing the quiche cups from the tin.
Serve warm, garnished with a few extra spinach leaves or crumbled feta if desired.
