3-Ingredient Foil-Wrapped Lemon Herb Salmon

4 salmon fillets (about 4–6 ounces each, skin-on or skinless)
2 lemons, thinly sliced (you’ll use most of the slices plus any extra juice)
2–3 tablespoons dried Italian herb seasoning or dried herb blend (such as a mix of parsley, basil, oregano, and thyme)
Salt and black pepper, to taste (optional but recommended)
1–2 tablespoons olive oil or melted butter, for drizzling (optional but helpful for moisture)
Heavy-duty aluminum foil, cut into 4 large pieces
Directions
Preheat your oven to 400°F (200°C). Tear off 4 large sheets of heavy-duty aluminum foil, each big enough to fully wrap one salmon fillet with a little extra room for air to circulate.
Lay a salmon fillet in the center of each piece of foil, skin-side down if the skin is on. Lightly pat the salmon dry with a paper towel so the seasonings stick well.
Sprinkle each fillet generously with dried Italian herb seasoning. If using, add a pinch of salt and black pepper to each piece. Drizzle a small amount of olive oil or melted butter over the top of each fillet for extra richness and moisture.
