Low Carb Sticky Honey Garlic Chicken

Ingredients
1.5 pounds chicken fillets, cut into chunks
1/3 cup soy sauce (or tamari for gluten-free)
1/4 cup sugar-free honey substitute
4 cloves garlic, minced
1 tablespoon apple cider vinegar
1 tablespoon olive oil
1/2 teaspoon ground ginger
1/4 teaspoon black pepper
1 tablespoon sesame seeds (optional, for garnish)
2 green onions, sliced (optional, for garnish)
Directions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the soy sauce, sugar-free honey substitute, minced garlic, apple cider vinegar, olive oil, ground ginger, and black pepper. Mix well to create the marinade.
Add the chicken chunks to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes, or up to 2 hours for more flavor.
Place the marinated chicken pieces on a disposable aluminum tray, spreading them out evenly.
Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the glaze has caramelized, turning the chicken pieces halfway through for even cooking.
Once cooked, remove the tray from the oven. If desired, sprinkle sesame seeds and sliced green onions over the chicken for garnish.
